Soak the cellophane noodles in cold water for 30 minutes.

Cut the scallions into small pieces for later use.

Heat the oil in a pot over high heat, then turn off the heat and let it cool down. When the oil temperature drops to about 30% of its original temperature, add the red oil bean paste and stir-fry over low heat until the oil turns red and the bean paste is slightly crispy.

Remove the red oil and set it aside, discarding the bean paste skin.

Heat another pot with lard, add the ground pork and stir-fry until the meat is loose and the water vapor is gone, with a shiny appearance.
