Cut the dough into 4x2cm strips, cover with a clean hot towel to soften it. Clean and wash the enoki mushrooms, cut a slit at the front to form two prongs, resembling ‘shrimp whiskers’. Peel and cut the apple into 4x1cm crescent shapes to form the ‘shrimp body’. Mix flour with water to make a thin batter and set aside.

Place the dough strips on a cutting board, spread the thin batter evenly, place an apple piece at one end, and then place the enoki mushrooms on top of the apple. Roll up the dough tightly to form the ‘shrimp dough’.

Heat oil in a wok, and when the oil is 50% hot, fry the shrimp dough until golden brown and remove from the oil.

Leave some oil in the wok, add ginger and scallion and stir-fry briefly. Then add soy sauce, sugar, and water, bring to a boil, and thicken with cornstarch. Add the fried shrimp dough and stir-fry until well combined. Drizzle with sesame oil, vinegar, and chopped scallion. Arrange the shrimp neatly on a plate.
