Cut the bitter melon in half and remove the pulp. Slice it into pieces.

Boil a pot of water, blanch the bitter melon, and remove it when the water boils.

Rinse the bitter melon with cold water to keep it green and crisp.

Mix the seasonings together and stir well. Slice the scallion whites into pieces.
