Instructions

1. Step 1

Mix the minced meat with cooking wine, white pepper, light soy sauce, cornstarch, and salt, and set aside.

2. Step 2

Rinse the wonton wrappers (or spring roll wrappers) and soak them in lukewarm water for 2-5 minutes.

3. Step 3

Cut the wrappers into 10-12 cm squares, and place a portion of the meat mixture at one corner of each square. Fold the wrapper into a triangle or a square shape, like a spring roll, and secure with a wet cotton string.

4. Step 4

Heat oil in a pan and fry the wrapped wontons until they are golden brown on both sides.

5. Step 5

Heat oil in a pan, add ginger and scallions, and stir-fry until fragrant. Add the fried wontons, and stir-fry slowly. Add water to cover the wontons, bring to a boil, and add light soy sauce, dark soy sauce, sugar, white pepper, cinnamon, star anise, and dried red chili. Simmer for 15 minutes, turning the wontons 1-2 times, until the sauce is reduced and the dish is ready to serve.
