Step 1
Soak 1 package of dried tofu in cold water for 12 hours. After the tofu has fully expanded, cut it into suitable lengths and set aside.

Cut the waxed meat into uniform slices and set aside. Cut the chili peppers into small pieces, remove excess water and set aside.

Boil water in a pot, blanch the tofu until it is cooked through, then remove and set aside. This step is to remove the beany smell from the tofu.

Heat oil in the pot, add the waxed meat and cook until it is crispy. Add a ladle of broth and cook the waxed meat over high heat until it is cooked through. After the water has evaporated, stir-fry the waxed meat until it is fragrant. Then add the chopped chili peppers and stir-fry over low heat until the chili peppers are dry and fragrant.

Add the tofu and broth to the pot, cover and cook over high heat for 6 minutes. Then, reduce the heat and simmer until the sauce has thickened. Add chicken essence and scallions, stir-fry well and serve.
