Cut the bamboo shoots into shreds, boil water in a pot, put the bamboo shoots into the pot and blanch for 3 minutes, then take them out and put them in a basket for later use;

Chop the scallions, coriander, and garlic into small pieces, heat a little oil in the pot, pour the scallions, coriander, and garlic into a small bowl after the oil is hot, let the oil cool for a while, then add an appropriate amount of soy sauce, vinegar, sesame oil, chili oil, and chicken essence to the bowl, mix well and serve.
