Cut the beef brisket into small pieces and blanch them in hot water, then drain the water. Cut the potatoes into similar-sized pieces. Add water to the wok, and put in star anise, cinnamon, cassia, cardamom, and ginger slices. If you want to simplify the process, you can directly add a stewing spice package. Add 1 tablespoon of soy sauce, 1 tablespoon of light soy sauce, 1 tablespoon of cooking wine, and 1 tablespoon of sugar. Bring to a boil, then add the blanched beef brisket. Cover and simmer over low heat for 1.5 hours.

Soak the potatoes in cold water for 5 minutes.
