Prepare 2 chicken legs and 1 potato.

Wash the chicken legs, cut them into 3cm cubes, and boil them in water with ginger slices and cooking wine for 2 minutes. Remove and drain.

Wash and cut the potato into 3cm cubes, and drain.

Heat oil in a pan, add ginger and scallions (and dried chili peppers if desired), and stir-fry until fragrant. Then add the chicken cubes and stir-fry for 2-3 minutes.
