Cut the chicken into small pieces and marinate with cooking wine, salt, and ginger slices for 30 minutes.

Prepare the ingredients: cut the tofu into small triangular pieces, mince the ginger and garlic, chop the onion, slice the green pepper and carrots, and cut the scallions into segments.

Heat oil in a wok and stir-fry the marinated chicken pieces until the water is evaporated, then set aside.
