Rinse the chicken and drain the water.

Cut the potatoes into chunks, and soak the mushrooms in water for 10 minutes, then drain the water.

Slice the ginger and cut the garlic in half.

Cut the scallions into segments for later use.

Heat oil in a pot, add garlic and ginger to stir-fry until fragrant, then add the chicken and stir-fry for a while. Add light soy sauce and dark soy sauce to color, and continue stir-frying for 1-2 minutes. Then add hot water to cover the chicken. After the water boils, add the mushrooms and wait for the water to boil again. Next, add the potatoes. (If you want more soup, you can add a little more water). After turning from high heat to low heat, simmer for 20 minutes. When the potatoes are cooked through, you can add salt and serve.
