Wash and peel the water chestnuts, then cut them into large dices.

Heat a little more oil than usual in a pot over low heat, add star anise to bring out the fragrance. Add the cut water chestnuts and stir-fry over low heat until they are slightly charred and wrinkled, then set aside.

Leave some oil in the pot, add dried chili peppers over medium heat and stir-fry. Add the stir-fried water chestnuts and continue to stir-fry together.
