Braised Lamb in Thick Soup

This tender and flavorful Lamb Shank Soup is a comforting dish that highlights the rich taste of lamb with aromatic spices and a hint of sweetness. Perfectly cleaned lamb shanks are simmered to perfection, creating a clear and refreshing broth. Key ingredients like scallions, ginger, chili peppers, and goji berries add depth, while a spice bag keeps the soup smooth and free of grit. The secret to the dish’s vibrant color and delicate sweetness lies in using rock sugar instead of white sugar, along with savory touches like sweet bean paste and soy sauce. Slowly stewed for maximum tenderness, this soup is both hearty and nourishing—ideal for cozy dinners. Whether using a traditional pot or a pressure cooker, this recipe delivers melt-in-your-mouth lamb every time. A must-try for anyone who loves rich, aromatic soups with a touch of spice!

Cover the pot, simmer over low heat for 75 minutes, then add the soaked goji berries, cover the lid, and simmer for another 10 minutes. If you have a pressure cooker, you can stew it for 25 minutes. It’s best to add enough water at once; if you need to add water during the process, make sure to add hot water.
