Wash the shrimp clean, cut open the back and remove the shrimp line, pan-fry in oil to set the shape.

Chop some scallions and garlic; mix a bowl of sauce, add whatever good ingredients you have at home, I added seafood sauce, tomato sauce, sugar, chicken essence, fish sauce and a little water.

Heat another pot with oil, fry the scallions and garlic.

Add the fried shrimp and a little cooking wine.

Pour in the mixed sauce, simmer over medium-low heat until the sauce is almost dry.
