Rinse the shrimp clean, use scissors to cut along the back of the shrimp from head to tail, and remove the shrimp thread. Rinse clean and drain the water for later use.

Mix 2 tablespoons (30ml) of light soy sauce, 1/2 teaspoon (2g) of black pepper powder, 1/2 teaspoon (2ml) of cooking wine, 2 tablespoons (30ml) of water, 1 teaspoon (5g) of sugar, and 1/2 teaspoon (2g) of cornstarch to make the braising sauce, set aside.

Heat oil in the pot, add scallions and ginger to stir-fry until fragrant. Pour in the processed shrimp, stir-fry until the shrimp starts to turn red, then pour in the braising sauce, mix well, cover and simmer for 2 minutes.

Stir-fry over high heat to thicken the sauce, add salt to taste, then add garlic cloves and chili oil, stir-fry evenly and turn off the heat.
