Soak dried tea tree mushrooms in water, wash and clean, then soak in water again. Put the mushroom soaking water into a pot, add some clean water, and ingredients like star anise, cinnamon, peppercorns, bay leaves, cloves, cardamom, licorice, salt, and a small amount of sugar, then boil to make the brine.

While cooking the brine, prepare other ingredients. Add a small amount of Shaoxing wine to the eggs. If you don’t like the taste of wine, you can add less or add a little water.

Wash and clean the small oil vegetables, cut the cucumber and carrot into shreds, and beat the eggs.
