Cut the pork into 5mm thick slices and set aside.

Mix the sauce with 6 tablespoons of sugar, 4 tablespoons of vinegar, and 1 tablespoon of soy sauce, and stir well with the scallion and ginger shreds. The sweetness and sourness can be adjusted according to personal taste.
