Soak the black fungus for more than 5 hours until it is fully expanded. Wash and tear it into small pieces. Remove the seeds from the red pepper, wash and tear it into small pieces.

Slice the pork tenderloin, add an egg, 2 tablespoons of starch, and a pinch of salt, and mix well. Heat a wok with a moderate amount of oil, and when it reaches 80% heat, add the meat slices and fry until they are golden brown, then remove and drain the oil.

Pour a small amount of oil into the wok, and when it reaches 80% heat, add the onion and stir-fry for 2 minutes. Then add the fungus and red pepper, continue to stir-fry for 3 minutes, add the meat slices, and season with salt, pepper, and soy sauce. Add an appropriate amount of warm water and stir-fry for 5 minutes. Just before serving, add a small amount of aged vinegar.
