Heat the oil, and when it is 70-80% hot, pour in the pork belly and stir-fry until the surface is golden brown. If you don’t want it to be too greasy, you can remove the excess oil.

Add the scallions, ginger, garlic, chili peppers, cooking wine, and soy sauce, and continue stir-frying until the ingredients are evenly coated with the sauce.
