Cut the pork loin into slices about 0.4 cm thick, marinate with 1 teaspoon of salt and cooking wine for a while, then coat with cornstarch.

Mix sugar and rice vinegar in a bowl, add soy sauce, remaining salt and a small amount of water, and stir well.
