Step 1
Remove the shell of the abalone and make a crisscross pattern on its surface. Slice the ginger and put it in water. After the water boils, add the pork belly with skin and bones and blanch it, then take it out. In another pot, add salt and Sichuan peppercorns to the water, and cook the broccoli until it is done.
2
Step 2
Heat oil in a cold pan, add sliced ginger, and stir-fry the pork belly until it changes color. Add the abalone and continue stir-frying until the pork belly changes color.
3
Step 3
Add soy sauce, sugar, cinnamon, oyster sauce, and water to the pan. Make sure the meat is covered with the sauce, and bring it to a boil over high heat. Then, reduce the heat to medium and simmer for 5 minutes.
4
Step 4
Transfer the ingredients to a pressure cooker. If the sauce is not enough, add some cool boiled water to cover the ingredients. Cook over medium heat, then reduce the heat to low and pressure cook for 8 minutes. Open the lid, flip the ingredients over, and continue to pressure cook over medium heat for 5 minutes.
5
Step 5
Open the lid, reduce the sauce over low heat, and serve. Place the broccoli at the bottom of the plate, put the pork belly and abalone on top, and drizzle the remaining sauce over them.
6
Step 6
The meat should be tender, the abalone should be chewy, and the sauce should be rich and savory. The addition of broccoli makes the dish less greasy and very appetizing.
