Wash the potatoes clean and cut them into small pieces.

Fill the bottom of the pot with oil, heat it over medium heat, add the potatoes and fry until golden brown, add salt (usual amount) and sugar (about 1:2 ratio), taste and adjust, then add water, add soy sauce to adjust the color, and cook until the sauce is thickened.

More oil can be added, after the flavor is sufficient, add water to cover the potatoes and cook for a while to absorb the flavor, it’s extremely fragrant!
