Cut the beef brisket into large pieces and rinse them under running water, then drain the water.

Wash the potatoes, onions, and carrots clean.

Cut the potatoes and carrots into rolling cuts, cut the onions into pieces, slice the ginger and scallions, and rinse the star anise.

Put cold water in a pot with two slices of ginger, add the beef pieces and blanch them, after the water boils, continue to cook for three minutes, until the beef foams are removed, then take them out and rinse with hot water.

Heat oil in a pot over medium heat, add the carrots, potatoes, and onions in sequence, stir-fry until they are 80% cooked (the potatoes are transparent with slightly charred edges), then take them out and set aside.
