Wash the pork belly and cook it in a pot until it’s done, then slice it and set aside. Peel and cut the potatoes into pieces and set aside. Heat oil in the pot, add minced garlic and star anise, and stir-fry until fragrant. Then add the sliced pork and stir-fry until most of the oil is released. When the oil is almost released, add the potatoes and curry powder, and stir-fry until the potatoes are shiny.

Transfer the mixture to a casserole and bring to a boil over high heat, then reduce the heat to low and simmer. Add light soy sauce and dark soy sauce, and stir occasionally to prevent the mixture from sticking to the bottom of the pot. When the potatoes are tender and can be easily pierced with a chopstick, sprinkle with scallions and serve.
