Instructions

1. Step 1

Clean and prepare the shrimp by removing the head and deveining, then wash and set aside.

2. Step 2

Heat oil in a pot over high heat until it reaches 80% heat, then add ginger, garlic, chili peppers, and Sichuan peppercorns, and stir-fry until fragrant.

3. Step 3

Add the shrimp to the pot and stir-fry over high heat, then add vinegar and cooking wine in sequence, followed by a small amount of soy sauce for coloring, and finally add pepper powder to taste.

After the shrimp changes color, add all the prepared spices and continue stir-frying to coat the shrimp evenly, then add a suitable amount of sugar, and finally add the concentrated chicken broth and stir-fry until combined.

Pour in beer to just cover the shrimp, adjust the heat to medium-low, cover the pot, and simmer for about 15 minutes, stirring every 5 minutes to ensure even flavor distribution.
