The sauce & seasonings

Instructions

1. Step 1

Chop the scallions into small pieces, mince the ginger, and cut the dried chili peppers into sections.

2. Step 2

Cut the tofu into cubes.

3. Step 3

Add water to the pot, add salt, and bring to a boil. Then add the tofu and cook until it is done.

Remove the tofu from the pot, drain the water, and set aside.

Heat an appropriate amount of oil in the pot, add the dried chili peppers, and stir-fry until fragrant.

Add the scallions and ginger, and stir-fry until fragrant.

Pour in light soy sauce and dark soy sauce, and bring to a boil over high heat.

Add granulated sugar, and stir until it is completely dissolved.

Add the cooked tofu to the pot.

Gently shake the pot, or use a spatula to gently stir the mixture, being careful not to break the tofu, until the sauce coats the tofu evenly.

Cook over high heat to reduce the sauce, and sprinkle with chopped scallions before serving.
