Clean the yellow bone fish, rub some salt, ginger, and cooking wine, and marinate for 20 minutes.

Clean the scallions and coriander, cut them into segments. Cut the ginger into slices and the garlic into slices.

Heat the oil in a pot, when the pot is slightly smoky, add the fish and adjust the heat to low, slowly fry it. Don’t flip it immediately, wait until it’s slightly puffed up, then flip it over and continue frying until it’s golden brown.

Turn up the heat, add the garlic slices, ginger slices, dried chili peppers, Sichuan peppercorns, and scallion segments, and stir-fry them together until fragrant.

After the fragrance comes out, add the fish. Sprinkle a spoonful of soy sauce on the fish, add some boiled water to cover the fish, and cook over high heat. Add some salt to taste, and add some cooking wine if you’re concerned about the fishy smell.
