Instructions

Clean the yellow fish and drain the water. Marinate the fish with salt and cooking wine for 15 minutes.

Heat oil in a pan, put the dried yellow fish in the pan and fry over medium heat until it is shaped, then turn to low heat and fry until it is golden brown. Turn off the heat and let it cool slightly, then flip the fish over and fry the other side until it is also golden brown.

Put ginger threads and scallion whites on the fish, add sugar and light soy sauce, then pour in half a bowl of water. Bring to a boil over high heat, then turn to medium-low heat and simmer until the sauce is almost dry.
