Cut broccoli into small florets and blanch with wood ears. Note that broccoli should not be overcooked, as it will become soft and lose its crunchy texture. After blanching, immediately rinse with cold water to preserve the green color and crunchy texture.

Peel and slice the Chinese yam, cut a small amount of meat into shreds, peel and devein the shrimp (reserve the shrimp heads for later use), and crush the garlic cloves.
