Wash and dry the carrots, then grate them into fine pieces. If using a blender, be careful not to over-blend. If necessary, use a knife to chop them further. Add a little salt and mix well with your hands until the salt is fully incorporated. Let it sit for a few minutes, then gently squeeze out some water with your hands.

Add chopped scallions, five-spice powder, mung bean flour, and wheat flour. Add an appropriate amount of salt (about 2 tablespoons) and mix in a clockwise direction until the ingredients are well combined, which should take about 2 minutes.

Let the mixture sit for 5-10 minutes to allow it to rest and become more cohesive, similar to dumpling filling.
