Cut the chicken into pieces and wash them clean. Wash and cut the celery into segments. Slice the ginger and scallions, and chop the dried chili peppers. Set aside.

Heat a wok and add cooking oil. When the oil is 80% hot, add the chicken pieces and stir-fry. Add an appropriate amount of sugar and continue stir-frying until the chicken is dry and free of moisture.
