- celery 150g
The aromatics
- mushrooms 100g
- green vegetables 100g
- scallions 3 stalks
- ginger 1 small piece (30g)
The sauce & seasonings

- white wine 1 tbsp
- soy sauce 1 tbsp
- chicken essence ½ tsp
- pepper to taste
- starch 1 tsp
- sesame oil 1 tsp

Prepare all the ingredients.

Wash the pork kidney and remove the tendon on top.

Make even horizontal cuts on the front side, but not all the way through.
