Prepare the ingredients. I used half of the chicken breast and roasted the other half in the oven.

Tear the chicken breast into strips along its grain. (If you dislike handling raw meat, you can cook it first and then shred it.)

Cut the wood ear mushrooms into strips and set aside.

Wash and clean the spinach, then blanch it in boiling water. After that, squeeze out the water and put it in a bowl.

Soak the cellophane noodles in hot water until they are soft, then cook them. After cooking, rinse them with cold water to stop the cooking process. Be careful not to overcook the noodles.

Blanch the chicken breast until it is cooked, then remove it from the water and drain the excess water. (Since I shredded the chicken breast before cooking, it took less time to cook. If you cook it in larger pieces, it may take around 7-8 minutes.)
