Kill the fish, scale and gut it, then wash and marinate it with salt, scallions, ginger, and cooking wine for 10 minutes. Cut the pickled vegetables, pickled ginger, and pickled peppers into pieces.

Heat vegetable oil in a pot until it foams, then add a small amount of lard. Once the lard is melted, add a small handful of Sichuan peppercorns. After the aroma of Sichuan peppercorns comes out, add the cut pickled vegetables, pickled ginger, and pickled peppers, and stir-fry for a while. Then add 1 tablespoon of bean paste and stir-fry until the bean paste is cooked. Add fresh garlic, ginger, and homemade chili sauce, and stir-fry for about 1 minute before adding water.

To make homemade chili sauce, blend pickled peppers into a paste using a food processor, then add mashed garlic and stir-fry with vegetable oil until fragrant.

After the water boils, add the fish, cooking wine, and a pinch of black pepper powder. Cook for about 8 minutes, or until the fish is cooked through. Finally, add the scallions and serve.
