Since there was no crab paste at home, I used crab roe instead. Thaw the crab roe. Heat lard and chicken oil in a pan, stir-fry the scallions and ginger, add the crab roe, Shaoxing wine, and cook over low heat until the crab roe releases its oil. Add a pinch of salt and a small amount of rice vinegar.

Mix the cooked crab roe with ground meat, drain as much oil as possible, as the crab roe is already oily and fragrant.

Add scallions, ginger, truffle, white pepper, soy sauce, oyster sauce, and broth to the crab roe mixture, and stir until well combined.

Mix glutinous rice flour with a small amount of tapioca flour, add warm water to form a dough. The tapioca flour can make the wrapper slightly transparent, but it can be omitted if desired.
