Place the fish strips in a cooking pot, add ginger, garlic, salt, cooking wine, five-spice powder, and a small amount of cornstarch, and mix well. Marinate for one night, the longer the better. If in a hurry, 30 minutes is also acceptable, just stir frequently to speed up the marinating process.

Take out the marinated fish strips and coat with a mixture of flour and cornstarch.

Mix flour and potato starch with water to form a batter that can coat the fish strips. Remove the ginger and garlic from the marinated fish strips and mix them into the batter.
