The ‘golden sand’ in Golden Sand Tofu is actually stir-fried salted egg yolk. Paired with crispy fried tofu, the flavor is so irresistible… you’ll finish a big bowl of rice in no time!

Step 1
Cut salted egg yolk and garlic cloves into small pieces and set aside.

For salted egg yolk, you can buy two salted duck eggs and extract the yolks, or purchase pre-packaged salted egg yolks online (usually sold in bags of a dozen or more, which is cost-effective).

Heat oil in a pan over medium heat (about 150°C or 300°F). Add cubed firm tofu and pan-fry until the surface turns golden brown, then remove. For extra crispiness, fry the tofu a second time. Note: Use ‘Northern tofu’ (firm tofu) as it has lower water content and holds its shape better for frying. ‘Southern tofu’ (soft tofu) is more suitable for cold dishes or soups.

Leave some oil in the pan, add salted egg yolk and minced garlic, and stir-fry until fragrant.

Add the fried tofu cubes and stir-fry. Season with salt, chicken bouillon, and pepper.
