Step 1
Steam the soaked glutinous rice until it is 80% cooked, then let it cool. Cut the Chinese sausage into small dices.

Wash and dice the carrots, heat oil in a pan and stir-fry the chopped scallions until fragrant.

Add the diced carrots and stir-fry until they become soft, then add the Chinese sausage and continue to stir-fry.

Stir-fry the Chinese sausage until its oil comes out, then add soy sauce and sugar.

Add the steamed glutinous rice and mix well with a pair of chopsticks.

Mix 150g of flour, 60g of water, appropriate amount of starch, 3g of salt, and a piece of slightly hard cold water dough, knead for 30 minutes, then roll out the dough into thin sheets using a pasta machine, and cut into circular shapes using a dumpling wrapper cutter. Roll the edges of the dough into wavy shapes.
