Prepare the ingredients, slice the zucchini, slice the lamb, chop the onion into strips, and soak the Sichuan peppercorns in water.

After the Sichuan peppercorn water has cooled, mix it with the lamb, add a small amount of starch, and stir in cooking wine to coat evenly, then heat a pan with cold oil and stir-fry until cooked.

Stir-fry the scallions and garlic, add the zucchini and cook until it’s slightly tender, then add the onion, lamb, cooking wine, salt, light soy sauce, and cumin, and stir-fry.
