About This Recipe
This hearty and flavorful Chicken and Potato Curry is a comforting one-pot meal that’s perfect for busy weeknights. Tender chicken legs are marinated with soy sauce, pepper, and spices for extra depth, then stir-fried with aromatic scallions (or onions for richer flavor). Paired with soft potatoes and sweet carrots, the dish simmers in a savory broth before melting in rich curry cubes, creating a luscious, velvety sauce. Serve it over steaming hot rice for a satisfying, restaurant-quality meal that’s easy to make at home. The blend of spices, tender veggies, and juicy chicken makes this curry irresistible—ideal for anyone craving a quick, delicious, and wholesome dinner!
