Prepare fresh shiitake mushrooms, wash and drain, tear into strips of any size.

The batter should be able to be lifted with chopsticks. If you’re unsure, you can test it by dipping a piece of mushroom into the batter to see if it can be coated. Gradually add the mushrooms to the batter and stir to coat.
