Step 1
Prepare fresh shiitake mushrooms, wash and drain, tear into strips of any size.

Take a bowl and mix flour, egg, a pinch of salt and pepper to form a batter. The amount of salt should be controlled, and it’s better to use less than more! The batter should be able to be lifted with chopsticks. If you’re unsure, you can test it by dipping a piece of mushroom into the batter to see if it can be coated. Gradually add the mushrooms to the batter and stir to coat.

Heat oil in a pot, then add the coated mushrooms, and fry over low heat until golden brown. Add the mushrooms one by one, do not add them all at once.

For a more delicate result, you can fry the mushrooms twice, then remove and serve.
