- Hang pepper 100g

- Winter melon seeds 1 tbsp
- Scallions 2 stalks
The sauce & seasonings
- Salt ½ tsp
- Cooking wine 1 tbsp
- Light soy sauce 1 tbsp
- Thirteen spices 1 tsp
- Rock sugar 1 tsp
- Monosodium glutamate ¼ tsp

Step 1
Wash and cut the Hang pepper into small sections, marinate with salt and cooking wine for half an hour.

Wash and peel the winter melon, remove the seeds and cut into small rectangular blocks, and place on a plate for later use.

Slice the five-flower pork, heat oil in a pan, add the pork and stir-fry, then add ginger, garlic, and thirteen spices. (If dried Hang pepper is available, add it after frying until fragrant) Wait until the oil is almost dry, then add the winter melon and stir-fry.

Stir-fry the winter melon for 3-5 minutes, add a small amount of light soy sauce, stir-fry and quickly add cooking wine and salt, bring to a boil over high heat, then simmer over low heat until the liquid is almost dry. (Add rock sugar when there is only a little water left, or caramelize the sugar at the beginning) Add the Hang pepper and a small amount of monosodium glutamate or chicken essence, stir-fry for 1 minute. Cover and simmer for 1 minute, then add scallions and stir-fry before serving.
