1. Step 1

Wash half a free-range chicken and put it in a pot, add water to cover the chicken, cook over medium heat for about 8 minutes, until the chicken is 70-80% cooked, remove the chicken and reserve the chicken broth for later use.
2. Step 2

Slice the ginger, cut the fresh red chili into strips, cut the dried red chili into segments, and cut the chicken into large pieces.

Heat the tea oil in a pot over high heat, add the ginger, fresh red chili, dried red chili, and Sichuan peppercorns, stir-fry until fragrant, then add the chicken and a pinch of salt, continue to stir-fry for 3 minutes.
4. Step 4

Add the chicken broth and rice vinegar to cover the chicken, cook over high heat for 3 minutes, season with salt, then cook for another 3 minutes, and dish out.

The finished dish is the famous Hunan cuisine Dong’an chicken.
