Wash the vegetables clean, cut the potatoes into cubes, tear the peppers open by hand, cut the cowpeas and celery into long segments, and cut the beef into 1cm particles.

Put oil in the pot, stir-fry the scallions and ginger, add the beef particles and stir-fry for 5 minutes, then pour in water.
