About This Recipe
This steamed enoki mushrooms recipe is a spicy, savory delight that’s quick to prepare yet bursting with flavor. Tender enoki mushrooms are steamed to perfection, retaining their delicate crunch, then topped with a vibrant mix of wild pepper and dried chili for a fiery kick. The magic lies in the sauce—a balanced blend of soy sauce, cooking wine, oyster sauce, and vinegar—poured over the mushrooms for a rich umami taste without overpowering saltiness. A final drizzle of hot oil enhances the aromas, while fresh scallions add color and freshness. Perfect as a side or light main, this dish is a must-try for spice lovers, with the option to add extra vinegar for a tangy twist. Simple, healthy, and irresistibly delicious!

menu_book Directions
1

Step 1
Cut off the stems of the enoki mushrooms and wash them clean.
2

Step 2
Drain the washed enoki mushrooms and place them on a plate.
3

Step 3
Chop the wild pepper and dried chili pepper (or use only wild pepper if no dried chili pepper is available) and arrange them in two rows.
4

Step 4
Place the enoki mushrooms in a steamer once the water is boiling.
5

Step 5
Steam over high heat for 6-7 minutes. Be careful not to overcook, as the enoki mushrooms will lose their crunchiness. Use a small spoon to remove excess liquid from the plate.
6

Step 6
Prepare the sauce! Do not add any seasonings during steaming except for the chili peppers. This dish can be made without salt, as the soy sauce contains enough salt. If soy sauce is added during steaming, the dish may become too salty. The sauce consists of 3 tablespoons of cooking wine, 4 tablespoons of soy sauce, 0.5 tablespoons of oyster sauce, and 0.5 tablespoons of vinegar. Mix well.
7

Step 7
Pour the sauce evenly over the enoki mushrooms and sprinkle some chopped scallions on top for a visually appealing presentation.
8

Step 8
Heat a small amount of oil in a clean wok, then pour it over the enoki mushrooms to complete the dish.
9

Step 9
For those who enjoy spicy food, try adding a small amount of vinegar for a refreshing and appetizing flavor.
