Fresh sea prawns or river prawns, about 3-5 cm long, have their feet and whiskers removed, washed clean in clear water, and drained of water. Place them in a transparent glass bowl with a lid. Note: Fresh live prawns are required.

Marinate: In a small bowl, combine 1 tablespoon each of scallions, ginger, and garlic, 2 tablespoons of rice vinegar, 1 tablespoon of light soy sauce, 1 teaspoon of salt, half a teaspoon of sugar, and a suitable amount of monosodium glutamate. Squeeze in a small amount of mustard and finally add 30g of 52-degree white wine; stir well, the marinating sauce is ready. (For those who like spicy food, you can add small millet pepper or chili oil)

Pour the marinating sauce evenly over the prawns, quickly cover the lid, and you will see the prawns jumping around, but soon they will slow down and get drunk, faint, and fall. It is recommended to marinate for 10 minutes before eating, at which time the prawns will be “euthanized” and the bacteria will be thoroughly killed, while the flavor and nutritional components of the prawns will be preserved. If you eat after only 2-3 minutes of marinating, it’s a bit cruel!
