Instructions

Peel the eggplant.

Cut it into thick slices and then into segments. Do not rinse, add salt and let it sit for 10 minutes to release water.

Squeeze out the water and add chicken seasoning and southern-style seasoning.

Mix in flour, add water and stir until it forms a paste. You can adjust the amount of flour to your liking, some people like a thicker coating on the eggplant.

Coat the eggplant with the flour mixture and it is ready to be fried. Coat a few pieces at a time.
