Instructions

Wash the eggplant and cut it into long strips about 5mm in size.

Heat a lot of oil in a pot, add the eggplant strips and fry until they are soft, then take them out and let them cool for a while to remove excess oil.

Leave a little oil in the pot and stir-fry the garlic.

Add the fried eggplant and stir-fry for a few minutes.

Add salt and sugar, stir-fry for a few more minutes, then add oyster sauce and stir-fry until well combined.
