About This Recipe
These juicy Pan-Fried Beef Buns are a savory delight, packed with tender minced beef and aromatic seasonings for an irresistible bite. The beef filling is marinated with oyster sauce, soy sauce, and Sichuan peppercorn water, creating a rich umami flavor with a subtle spicy kick. A blend of scallions, ginger, and egg white ensures the filling stays moist and elastic. Encased in a soft, hand-kneaded dough, each bun is pan-fried to a golden crisp, then steamed for a perfect balance of crunch and fluffiness. The double-cooking method—frying and steaming—locks in the juices, making every bite bursting with flavor. Ideal as a snack or meal, these buns are a must-try for anyone who loves bold, savory tastes with a satisfying texture.

menu_book Directions
1

Step 1
Wash the beef and chop it into minced meat.
2

Step 2
Pour in oyster sauce and soy sauce.
3

Step 3
Add salt and cooking wine.
4

Step 4
Pour in olive oil and chopped scallion and ginger.
5

Step 5
Pour in the Sichuan peppercorn water that has been soaked in hot water in advance, and add it to the meat mixture in batches, stirring constantly in one direction. Finally, pour in the egg white and continue stirring in one direction until the meat mixture becomes elastic. (It can be refrigerated for a while)
6

Step 6
Mix flour with 120g of water to form a dough, and then knead the dough until it becomes soft and moderate in hardness. Let it rest for about 30 minutes. Divide the dough into small pieces and roll them into long strips.
7

Step 7
Use a rolling pin to roll out each piece into a circular shape with a thicker middle and thinner edges. Place the meat filling in the center and top with a sprinkle of chopped scallion.
8

Step 8
Fold and pleat the dough to form a bun shape, and press the edges together to seal the filling inside. Place the bun seam-side down on a flat surface.
9

Step 9
Heat oil in a pan and place the bun seam-side down. Fry until one side is golden brown, then flip and fry the other side. When the pan starts to make a sizzling sound, add a small amount of water to the pan (about one-third of the height of the bun) and cover the pan with a lid to steam for 5 minutes before serving.
