Chop the scallions and ginger into fine pieces. Cut all mushrooms into dices of about 1 cm in size. Take a large bowl, mix the soybean paste and sweet flour paste in a ratio of 2:1, add a small spoon of water and mix well. Pour a small amount of oil into the pot, heat it to 50% heat, turn to medium fire, put in the mushroom dices and stir. When the mushrooms are slightly softened, use a spatula to gently push them and scoop out the mushroom dices, leaving excess oil in the pot.
